Summer time in our house means later evenings, more time together and of course, treats. Whether it be icees and popsicles to stay cool in the heat or dessert after dinner, we indulge a little more than usual because we have the extra time. So today I wanted to share with you a dessert called ‘Pazookie’. Think pizza and cookie. A giant hot cookie topped with ice cream and everyone dives in together ’round the table. The best part? What you will want to do first is make or buy the chocolate chip cookie dough of your choosing. I usually do home-made, but when I am in a hurry or have a full day I will simply buy the 36 oz. tub of Nestle Tollhouse Chocolate Cookie Dough from the store. Because, it seriously is the best.

Make sure and preheat your oven to 350 degrees. Then you want to use an iron skillet and flatten the dough into it. This is the “pizza” part of the Pazookie.

Once you have it ready to go pop it into the oven. Now, timing is going to differ depending on the size of your iron skillet, the amount of dough, etc. As an example, my iron skillet I use for this is approximately 2 inches deep and 9 inches across. And we bake it for about 30 minutes.

The goal is to watch the oven and when those edges start browning and looking baked that’s when you want to take it out. You want the middle to still be gooey to get the full effect.

Then you simply top with the ice cream of your choosing (ours is always vanilla bean) and dive in with your loved ones!

Ingredients:

  • chocolate chip cookie dough (your favorite homemade recipe or store bought)
  • cast iron skillet
  • choice of ice cream

Directions:

  • Preheat your oven to 350 degrees
  • mix/prep your dough
  • spread and flatten into skillet
  • place in oven for approximately 25 to 25 minutes
  • serve hot and topped with ice cream
