Another salad recipe? Must be summer in the desert. And another one that calls for rotisserie chicken? We like the easy livin’ over here apparently. We are surviving off of fresh, cool and light recipes and this latest one has us addicted. And how responsible do I feel eating salad almost daily? #AdultingHard. The recipe / ingredient list for your shopping pleasure:

(feeding a family of six has us doubling the following recipe)

– 1 rotisserie chicken

– 1 head of Romaine lettuce

– chopped green onion (as much as you desire)

– 1 package of wonton strips

– 1 Tbsp soy sauce

– 1 Tbsp vegetable oil

– 3 Tbsp rice vinegar

– 2 Tbsp brown sugar

– 1 Tbsp sesame seeds

– 2 Tsp sesame oil

– 1 garlic clove

Cooking directions:

Step #1: Combine chicken, chopped romaine and green onion in a large mixing bowl.

Step #2: For the dressing, combine soy sauce, vegetable oil, rice vinegar, brown sugar, sesame seeds, sesame oil and grated garlic clove in a separate bowl and stir thoroughly.

Step #3: Top salad with desired amount of wonton strips and add dressing

*You can also toast the sesame seeds in a skillet to bring out even more of the nutty flavor, but it wasn’t that dramatic of a difference to us so I skip it.

*If you want to have this salad pre-made for on the go and fast lunches, be sure and set the dressing aside and add it when actually ready to eat. This will keep everything fresh and crunchy while stored in the fridge.
