This homemade magic shell ice cream topping recipe is such a fun one! If you hang out with me on Instagram, you know how much we love family nights at our house. We do a favorite easy dinner, we enjoy some ice cream, and then we all cozy up for a movie. It’s one night each week that we can soak in time together with no distractions. I look forward to it every single week.

You can do this recipe with any chocolate and any ice cream, but I am going to also show you how our family does it with a low carb, no sugar, gluten-free flair. Because when Blair was diagnosed last summer with Type 1, suddenly our favorite traditions as a family needed adjusting. Her overall health is most important and lucky for us, the changes for her mean changes for us and we are all benefitting. The blessings we find in trials, right?

*Note: Some of these products contain sugar alcohols. I know there are opinions about them and which kind are better than others. While we try and be as selective and intentional as possible, I also know that stressing over every little thing can be just as detrimental as the ingredients themselves.

Our ice cream of choice

It has been quite the task to find replacements that we are happy with and love just as much as what we enjoyed before. But I knew I needed to tackle our family night dessert very first because it means so much to all of us.  The ice cream we have found to be our favorite option is Rebel Creamery. Tons of flavors and we are able to find them locally at Kroger, Walmart, as well as Whole Foods. Such a saving grace.

Our chocolate of choice

*Update: The SkinnyDipped Baking Bits have become extremely difficult to find. I’m not sure if they have discontinued them or not, which is a total shame because they do not budge Blair’s blood sugar. However, I have been able to still locate them on Amazon right here. Another great option for low-carb chocolate is Lily’s semi-sweet baking chips.

We discovered the Skinny Dipped baking bits and absolutely love them. No sugar alcohols so it helps to reduce things in that area. And this is the chocolate we turn to for this homemade magic shell ice cream topping. We have been able to find the Skinny Dipped baking bits at our local Walmart.

Another fun topping choice!

Sprinkles were another area that you just don’t think about until Type 1 enters your life, you know? Another fabulous brand that we were told about was Good Dee’s Sprinkles. Even though this is another one that contains sugar alcohol, it has been so fun to have this topping for Blair. I love that their rainbow sprinkles are dye free as well! I have been able to find them on Amazon and also have ordered straight from their website.

Okay, onto the first step in making your homemade magic shell topping.

This is one of those recipes where we don’t measure. I simply take a handful of chocolate baking bits and add a tablespoon of coconut oil. You can either choose to heat it up on the stove or melt it in the microwave. If you do the microwave, simply just start with 15 seconds and then check. Repeat if necessary.

The consistency of your chocolate will be very thin. That’s how it is supposed to be so don’t worry – you are on the right track!

Now for the second and last step (I told you it was easy!)

You will simply want to drizzle your melted chocolate over the top of your ice cream.

And it has taken time to recreate our family favorites in a way that both honors Blair’s needs and helps all of us to walk this journey with her. It’s a team thing and always will be.

Homemade Magic Shell Ice Cream Topping

Prep Time: 5 minutes
Total Time: 5 minutes

Just the right bit of added magic for ice cream night!

Ingredients

  • a handful of your choice of chocolate to melt
  • 1 tbsp Coconut oil

Instructions

  1. In a pot or microwave safe bowl, add in a handful of your chocolate of choice to melt
  2. Then add approximately 1 tbsp of coconut oil
  3. Melt together (consistency should be thin)
  4. Finish off by drizzling on top of your ice cream
