It’s that time of year where we crave light and fresh for most meals to combat the summer heat here in the Phoenix desert. While this salad is both of those things it also is the perfect fit for any meal or time of year. As always, I’m sharing a recipe that (most of) my kids enjoy and everyone who we share it with becomes addicted as well. It’s also yet another recipe that looks amazing, but can be made quickly and easily. Keep scrolling to catch this delicious strawberry and goat cheese salad for yourself!
Start with a spring salad mix. You’ll see variations of this recipe used with spinach only, but I find spinach extremely hearty and thick. I love a spring salad mix so you can still get that spinach, but in a lighter touch.
You are then going to take fresh strawberries and slice them thinly. I use an entire carton of them for this salad.
The next piece is goat cheese. I don’t use any particular brand, but you can find it in the deli section of your local store and all you will need is a 4 oz. package. It’s a soft and sticky type of cheese so you will want to try your best to “crumble” it into small pieces.
Next I add “candied” or “glazed” walnuts. Now it’s possible to make these yourself, but again, I am always looking to make my recipes as easy and quick as possible. I always buy these pre-packaged at my local store. They add the perfect crunch to the salad.
Then you’ll want to toss everything together.
